  1. The Food Log/

July 2025

A poultry seasoning batch made and dry-rubbed chicken tested, a refined chai recipe (technique intentionally breaks standard tea-brewing rules, works anyway), and a running want-list — a deli meat press, crispier roast chicken, Nanaimo bars — alongside a “win the freezer” push to clear out beef balls, patties, and ham.

Food links

  • Food adulterants testing
  • WTF: win the freezer edition
    • beef balls → lunch soups
    • patties → burgs
    • ham → breakfast sandies
  • Transglutaminase → meat glue (great for making lunch meats, though a farce + emulsification does so naturally)

Home food thinking

Chai (updated recipe)

→ Chai

  • Some of the chai masala techniques I’ve seen break the rules of tea making (temp + time are much harder than English style tea brewing). It works, however, and you end up with a different (but good) tea flavour.
  • Ingredients
    • 2-3 cups of water
    • 3-4 cloves
    • 3-4 cardamom pods
    • 2 teaspoons loose tea (Scottish breakfast is what I usually use)
    • 2 teaspoons sugar
    • a few slices of ginger
    • milk (120 ml) or cream (60 ml), or to taste
  • Steps
    • Boil water/spices (can toast first if you want)
    • Add tea
    • ~5 minutes
    • Add milk or cream and “boil over” 3 times: boil until it foams, remove from heat, stir, repeat, avoiding catastrophe.
    • Goal: caramel sauce colour
