This vegetarian pepperoni substitute is great for pizzas, calzones, and rice dishes. It’s firm and sliceable like a hard cheese, with a nice, peppery flavour. It browns nicely, so put it on top of the cheese when using it on pizza!
Ingredients
- ~200 g (½ package) smoked tofu, or home-smoked medium-firm tofu
- 2 tbsp smoked or hot paprika
- 2 tsp kosher salt
- 5–10 turns fresh black pepper
- 1 tbsp sugar
- 1 tsp garlic powder
- 1 tsp onion powder
- 1–2 tbsp olive oil
Method
Mix the spices and taste; the salt, sweet, and spice should balance.
Slice the tofu thinly and toss it with the oil and spice mix in an airtight container.
Let it marinate in the fridge. It keeps 1–2 weeks.
Notes
- Smoked tempeh also works well.
