These are delicious little pickles, perfect for fresh roast beef sandwiches.
Mechanic
A fast fridge pickle built for max contrast over sweetness. No sugar, no turmeric, no brightening agents: just sharp acid and mustard seed. The ratio is roughly 1.2:1 water to vinegar, which is milder than a straight vinegar pickle.
Ingredients
- 225g Kirby cucumbers (2 small), thinly sliced
- 300ml water
- 250ml distilled white vinegar
- 10–15g kosher salt
- 2 cloves garlic, roughly sliced
- 6g black peppercorns (2 teaspoons)
- 6g whole yellow mustard seeds (2 teaspoons)
- 2 sprigs fresh dill
Method
Combine water, vinegar, and salt in a small saucepan. Heat until salt dissolves; no need to boil. Cool slightly.
Pack cucumbers, garlic, peppercorns, mustard seeds, and dill into a clean jar. Pour brine over to cover.
Cool to room temperature, then refrigerate. Ready in 4–6 hours; better after 24.
To serve
On burgers, sandwiches, or alongside charcuterie. Keeps refrigerated for 2–3 weeks.
Notes
- 10g salt is the working amount; 15g for a sharper, brinier result.
- No sweetener is intentional; adding even a small amount shifts the profile significantly.
