This is my favourite spring and summer drink.
Ingredients
- 400 ml cold brewed tea
- 3 heaping tsp sugar
- 15 ml (1 tbsp) fresh lime juice
- 10 ml (2 tsp) fresh lemon juice
- ice
Method
Put the sugar, lime juice, and lemon juice in a cocktail shaker (or a pint glass, with a second one to cap it) with ice. Add the tea and shake until cold and slightly frothy.
Strain over fresh ice in a tall glass.
To serve
Straight. As written it leans tart; add another half-teaspoon of sugar if you like it sweeter.
Variations
Weight-based batch
350 g strong black tea, 40 g 1:1 simple syrup, and 30 g citrus juice (3:1 lime to lemon). Stir over ice in a pitcher rather than shaking. Scales cleanly to any size.
Cold brew batch
Steep tea bags in 1 L cold water overnight in the fridge. Combine the 1 L of cold brew with 90 g white sugar and 65 ml lime juice, and stir until the sugar dissolves. Serve over ice. No shaking needed: cold brew is already smooth and low in bitterness.
