Sometimes I’m craving a diner-style griddle burger with a classic hamburger sauce. This is a fairly close match to a popular burger chain that hasn’t made it to our region yet.
Ingredients
- 120 ml mayonnaise (½ cup)
- 3 tablespoons ketchup
- ½ teaspoon yellow mustard
- 1 tablespoon white vinegar
- 2 teaspoons sweet pickle relish
- 2 teaspoons sugar
- 2 teaspoons finely minced white onion
- ¼ teaspoon paprika
- 0.1 g MSG (a smidgen, about 1/32 teaspoon; 0.05% of total weight)
- Salt and pepper, to taste
Method
Combine the mayonnaise, ketchup, mustard, vinegar, relish, sugar, onion, paprika, and MSG in a mixing bowl. Stir until uniform in colour with no streaks of ketchup or mustard visible.
Taste and adjust with salt and pepper.
Cover and refrigerate at least 1 hour, until the onion and pickle flavours have mellowed into the base.
To serve
Spread on burger buns, use as a sandwich spread, or serve as a dip for fries.
Notes
- 0.05% MSG by weight is small enough that a kitchen scale is the only reliable way to measure it; volume spoons this small (smidgen, drop) are approximate.
- Keeps refrigerated about 1 week in a sealed container.
