This is a work-in-progress recipe to replicate Farmer Soup (from the ABC Country Restaurants). This needs to use farmer sausage from Rempel Meats in Abbotsford, or a large hand-made, smoked farmer sausage.
Ingredients
- ½ large farmer sausage, cut into bite-size pieces
- 1 cup onion, diced
- 2 large Yukon Gold potatoes, diced
- ¾ cup celery, diced
- 1½ cups carrots, diced
- 4 cups chicken broth
- 1 tbsp herbes de Provence
- 1–2 tbsp soy sauce
- salt and pepper, to taste
To thicken
- 3 tbsp cornstarch
- 1 cup cream
- 1 cup whole milk
Method
In a large pot over medium heat, fry the farmer sausage until lightly browned. Add the onion and sauté until translucent. Add the remaining vegetables, broth, herbes de Provence, and soy sauce, and stir. Lower the heat and simmer until the potatoes are soft.
Whisk the cornstarch into the milk and cream. Stir it into the soup and bring it back to a simmer, stirring, until the soup thickens slightly. Cornstarch doesn’t thicken until it’s close to boiling.
Season with salt and pepper and serve.
