Enchiladas, stacked instead of rolled. Flour or corn tortillas are layered with seasoned beef, beans, enchilada sauce or salsa, and cheese, and the oven melts it into something you can cut. Four or five layers is plenty. Stacked higher, it’s a taco lasagne, or a twelve-layer dip you bake.
It’s layered like a lasagne, which this blueprint otherwise leaves out, but nothing in it is built for the dish. The beef is Beef base with taco seasoning, the beans and salsa come from the fridge, and the tortillas are whatever’s in the bag.
Picks
Savoury, beany, and cheesy, with a sharp fresh top.
- The starch: Tortillas, layered, one per layer and torn to fit
- The filling: Taco-seasoned beef base and refried or fried black beans
- The sauce: Salsa or enchilada sauce, spread on every layer
- The top and the bake: Cheese, then cold toppings after it comes out: sour cream, lettuce, green onion, and fresh salsa
Why these picks
- Stacked, not rolled. The same parts as enchiladas, without rolling a dozen tortillas.
- Sauce on every layer. The tortillas soften by soaking it up. A dry layer stays leathery.
- Beans and beef in separate layers. The beans are the creamy layer, which a lasagne gets from its cheese filling.
- Cold toppings after. Lettuce and sour cream baked are limp and split. Added at the end, they’re the seven-layer dip’s fresh top.
How it fails
- Leathery tortillas: not enough sauce. Corn tortillas need more than flour.
- Soupy: too much thin salsa. Drain fresh salsa, or use a thicker enchilada sauce.
- Falls apart: it wasn’t rested. Give it 10 minutes before cutting.
Variations
- Rolled enchiladas: roll the filling in the tortillas, lay them side by side, and cover them with enchilada sauce and cheese. Same parts, more work.
- Chicken: Shredded taco chicken in place of the beef. With cream of chicken soup in the sauce, it’s most of the way to King Ranch chicken, the Texas potluck casserole.
- Vegetarian: beans and roasted vegetables, or the lentils from Lentil tacos.
- Taco lasagne, twelve layers: a thinner layer of each, and a deeper dish.
